- More than 10 years ago, we bought a sunny mountain, 600 meters above sea level, and built a log house and a warehouse there, and we spend most of the year in this place. When we wake up in the morning, we check the shiitake mushrooms on the hoda field and manage the work carefully. It is important to harvest the shiitake mushrooms at the right time and in the cold season of winter to make them delicious. Therefore, we cover each shiitake mushroom with a bag in winter and sprinkle water on the 12,000 square meter hoda field to make the shiitake mushrooms grow bigger. In March 2017, the shiitake mushrooms are JAS organic certified. We are certified by JONA, which is said to be the oldest and strictest organic JAS certification organization in Japan. Every year, we have been asked to come from Tokyo for an inspection, and we have been able to continue our organic JAS certification.
